> INGREDIENTS:
BBQ sauce:
- 1/2 cup tomato paste
- 1 tbsp apple cider vinegar
- 1 tbsp soy sauce
- 1 tbsp maple syrup
- 1 tsp smoked paprika powder
- 1 tsp garlic powder
- 2 tbsp water
Lime mayonnaise:
- 1/2 cup vegan mayonnaise
- 1 tbsp lime juice
- 1/2 tsp garlic powder
- 1/2 tsp chopped jalapeño
Grilled pineapple:
- 4 slices of pineapple (fresh or canned)
- 2 tbsp brown sugar
- 1 tbsp maple syrup
- 1/4 tsp coarse salt
Burger:
- 4 burger buns
- 4 HARi&CO green lentils patties
- 1/2 red onion
- 4 slices of tomato
- 4 large leaves of lettuce
> INSTRUCTIONS:
BBQ sauce:
- Mix all the ingredients in a bowl and stir to combine. Taste and adjust the seasoning according to your taste. If the sauce is too thick, add a little more water one teaspoon at the time until you get the desired consistency. Set aside.
Lime mayonnaise:
- Finely chop the jalapeño. Mix all the ingredients in a bowl and stir to combine. Taste and adjust the seasoning according to your taste. Set aside.
Grilled pineapple:
- Mix the sugar and maple syrup in a bowl. Arrange the slices of pineapple in a plate and brush with the marinade on both sides to fully coat.
- Cook on the grill or in a frying pan for 4-5 minutes on each side, until grilled. Remove from heat and immediately sprinkle coarse salt on top.
Assembly:
- Cook the HARi&CO green lentil patties in a non-sticky pan without oil.
- Cut the buns in half and lightly toast in a toaster or on the grill. Rinse the lettuce. Slice the onion and the tomato. Spread the lime mayonnaise on bun bottom. Add lettuce, tomato, HARi&CO green lentil patty, grilled pineapple slice and onion. Spread the BBQ sauce on bun top and set up.
