HARi&CO red beans no-meat balls

INGREDIENTS :

For the roasted veggies :

  • 1/2 red pepper
  • 1/2 yellow pepper
  • 1/2 zucchini
  • 1/2 eggplant
  • 4 tbsp olive oil
  • 2 tbsp dry rosemary
  • Salt, pepper

For the arugula pesto :

  • 40 g fresh arugula
  • 3 basil leaves
  • 1/2 garlic clove
  • 2 tbsp pine nut
  • 1 tbsp nutritional yeast
  • 1 tbsp olive oil
  • 2 tsp lemon juice
  • 1/2 tsp salt

For the pasta salad :

PREPARATION :

Prepare the roasted veggies :

  1. Preheat the oven to 400F and line a baking tray with baking paper.
  2. Wash all the veggies. Cut the peppers into strips. Cut the zucchini and eggplant into small -medium dices.
  3. Place the veggies on the baking tray and drizzle generously with olive oil. Sprinkle with dry rosemary, salt and black pepper.
  4. Bake in oven for around 30 minutes, until all the veggies are nicely browned. Remove from the oven and allow to cool down.

Prepare the arugula pesto :

  1. Wash and drain the arugula. Roughly chop the arugula, basil and garlic clove.
  2. Place the arugula, basil, garlic, pine nuts and nutritional yeast in a food processor and mix until a grainy paste forms.
  3. Add the olive oil, lemon juice and salt, and keep mixing to emulsify and until all the ingredients are well combined. Don’t over-mix to keep some texture and little chunks in the pesto.

Prepare the pasta salad :

  1. Cook the HARi&CO red beans no-meat balls according to the packaging instructions.
  2. Cook the penne pastas in a large pot of boiling salted water, according to the packaging instructions. Once cooked, drain the pastas and allow to cool down for a couple minutes.
  3. Place the cooled pastas in a large bowl and add the roasted veggies, sliced black olives, half of the pesto preparation and a drizzle of olive oil. Gently toss to coat the pastas and combine.
  4. Serve the pasta salad in two plates and garnish with HARi&CO red beans no-meat balls, pumpkin seeds, fresh basil and more arugula pesto. Enjoy!
